Head Chef applications are being invited, as expressions of interest, for a new restaurant in the Sydney CBD that will serve luxury Modern Japanese fine dining from mid 2027. It sits in a prestigious new development, and a hospitality group with several awarded restaurants is behind it. An award-winning Japanese architect and master ceramic artisans are working on the design.
Working next to the Executive Chef, you would head the kitchen brigade, hold culinary standards at their highest and help establish the restaurant's name. The group values a leader who is confident yet humble, who works for the team, who treats colleagues with dignity and respect, and who will not stand for bullying or intimidation. Key Responsibilities
- Direct, coach and inspire the kitchen team
- Work with the Executive Chef on menus and innovation, serving food of exceptional quality, consistency and presentation
- Oversee kitchen operations across sushi, robata, omakase, à la carte and private dining
- Manage spending on food, labour and purchasing, along with budgets, rosters, stock control and profitability
- Hire, train and develop skilled chefs, insisting on accountability and operational discipline, and keep food safety, hygiene and compliance in line with the highest standards
- Build a kitchen culture of professionalism, teamwork and mutual respect
Requirements & Eligibility
- Senior leadership experience, proven, in acclaimed Japanese premium-dining restaurants or in internationally recognised hospitality groups
- Experience at renowned restaurants of comparable calibre is highly regarded
- Exceptional Japanese culinary knowledge, technical ability and attention to detail
- Commercial understanding of kitchen financial performance and of food and labour costs; a demonstrated ability to develop, motivate and retain outstanding kitchen teams
- Excellent communication, organisation and leadership skills; a calm, composed and professional approach under pressure
