A pub kitchen in country Queensland is looking for a Sous Chef who can hold a busy operation together. The post is permanent and full-time. You would answer to the Head Chef and be the person the cooks look to on every shift, with three Chefs de Partie and one Cook on the brigade, serving lunch and dinner seven days a week and about 1,000 meals in a typical week.

Key Responsibilities
- Be the senior voice on the line and supervise the work at every station
- Keep daily service moving through lunch and dinner
- Sequence prep, cooking and service so they work as one flow
- Hold every plate to the same standard for presentation and portion size, and guard quality
- Control prep lists, stock rotation, ordering and wastage
- Practise and enforce food safety and workplace safety, and train, mentor and develop kitchen staff
Requirements & Eligibility
- Proven experience as a Sous Chef, Assistant Kitchen Manager or senior kitchen supervisor
- Experience in a commercial pub kitchen that produces about 1,000 meals a week or more, and strong leadership skills
- A sound understanding of stock management, food costs and portion control
- Ability to own kitchen operations without constant supervision
